TWO WEEKS INTO IT AND WE ARE TOTALLY LOVING LA VIDA VEGAN

End of two weeks on 21-Day Weight Loss Kickstart

It’s Memorial Day!  Today we are Living La Vida Vegan in the swimming pool and roasting veggies on the grill (burgers for the grandkids).  The American flag is flying on front porch. We thank all men and women who have served our country for our freedom!

These past two weeks have been the best diet weeks of my life.  I've actually stayed on course without really trying.  I tried some great new vegan recipes and added restaurants and menu items that I can add to my “Vegan Restaurant List”.  It was a very busy and stressful week, which meant eating out and not exercising. Plus, we went to the beach yesterday with family and pets. In the past this outing would include lots of beer and fried chicken or some other meat along with the countless number of chips and peanuts. Not this time and it was great!! Normally this type of week would mean disaster for my diet, but this time, I lost an additional 1 ½ lbs.  This was an awesome sight to see on my scale!  Ed lost a couple more pounds too.  And not just the scale – freshly washed jeans slipped on, zipped and buttoned so easily.  The last time I wore these jeans I had to lay on the bed and to zip and button them.  I love this!!!

One thing that both Ed and I noticed this week was a very mild (almost not there) headache for several days.  Mine is totally gone today and Ed may still have a lingering one.  My guess is that we are experiencing a bit of withdrawal and there’s a bit of detox going on.  Fine with both of us – we are loving the fact that we are cleaning out our bodies and getting healthy (and slimmer)!

My blood pressure went up slightly this week but it has been a STRESSFUL one.  Ed is a school board trustee (but not a politician!) and things have been a little wacko this week.  He has taken a stand that the Board should focus on giving the children a better education (imagine that!) rather than stroking the egos of the local political machine. He feels he would rather lose his re-election (in 2 years) for the right reasons than to win it for the wrong ones.  Gotta love that man! Things have quieted down a bit and he’s received praise from so many that I think the next few days I’ll be back to normal.

I didn’t write down what we ate each day this week.  Breakfasts were pretty much the same but I did try some fabulous recipes which provided us with some tasty meals and great left-overs:

Grilled Polenta – This is kind of a thin crusty corn bread with all the bad stuff left out.  This is great with grilled tofu and vegetables. Also tasted great dipping them into salsa! This recipe is from www.nutritional.org and can also be found at http://www.21daykickstart.org/. 

Mexican Quinoa – I love Quinoa.  It is a high-protein grain with a nutty flavor. I also used the Quinoa in a bean and quinoa burrito (replacing the rice).  This was a “Recipe of the Week” recipe from Food for Life.  You can sign up for these weekly recipes at http://www.pcrm.org/.  PCRM stands for Physicians Committee for Responsible Medicine.  Thank you God for doctors who believe help us be well with healthy lifestyles rather than just fixing what’s broken.

Risotto and Oyster Mushrooms – This recipe is from the kind diet. We both loved it. I served it with a nice spinach and arugula salad with a couple of slices of avocado.  This was a great dinner (and lunch).  Love those fabulous leftovers!

Grilled Portobello Steaks – It’s hard to believe just how great these “steaks” are!  Who needs to eat cow! (Yes, that’s what beef is!!)  Even Ed who’s been a die-hard beef eater loved these. His comment was “Wow, no blood needs to be shed to satisfy me anymore!”  Sounds like I’ve got myself my first recruit!! This recipe was from 21-Day Weight Loss Kick Start.
